30-Day Almost Keto Challenge

Day 01 of my 30-Day Almost Keto Challenge.. here we go!

It’s been more than a year of being happily married to my beautiful bride Lila! During this time, I told myself that for one year (we got married on 12/31/19), we would focus on our relationship, enjoy each other and enjoy life! Building the foundation of our home life centered in Christ has been the biggest blessing that I could ever ask for!

However I discovered that our bodies don’t process food in the same way. I probably consumed more sugars, alcohol, and processed foods than Lila during our first year.. but for me, I was starting to feel bloated, lethargic, and slower even though I was avoiding carbs for the most part, hitting the gym, and even started doing some yoga and light running.. both very inconsistently.

It’s already been more than a month since I promised that I would actually do something different. My laziness and excuses didn’t help.. Finally it dawned upon me that something major needed to change when I was reminded that eating cleaner and exercising more consistently would not only help me physically but also to draw closer to God and be a better minister to those that I’m blessed to influence.

I decided to start a 30-day challenge (which I’ve already failed here and there) to at least put my goals into actions. I’m not striving for perfection or wanting to get religious about it, but the main reason for me sharing this with you all is to be accountable to myself and all of you!

This process is helping me own up to times when I do slip off of my desired diet, distinguish patterns of foods / drinks that I might fall back to, and reset my goals to have a renewed outlook towards the next day to try again!

Day 01: Saturday 2/1/20

  • Breakfast – coffee with brown sugar and powdered nondairy creamer
  • Lunch – CPK – smoked salmon with corn salad
  • Dinner – salami, cheese, prosciutto, artichokes, cod, steak and salad
  • Cheat – had a few glasses of wine at an event
  • Drank plenty water

Day 02: Sunday 2/2/20

  • Breakfast – steel cut oatmeal with blue berries and almonds
  • Lunch – ate choke dumplings to celebrate Chinese New Year
  • Dinner – Made keto chicken thigh over mixed veggies and carrots 
  • Cheat – won ton wrappers from dumplings
  • Drank plenty water 

Day 03: Monday 2/3/20

  • Breakfast – steel cut oatmeal with blueberries and almonds
  • Decaf coffee at Lions with two brown sugar packets
  • Gym time – leg day with 10 mins on treadmill 
  • Lunch – keto chicken thigh over mixed veggies and carrots 
  • Dinner – Arancino – prime rib eye with arugula
  • Cheat – ate a small bowl of Hawaiian Kettle Style Potato Chips 
  • Drank plenty water 

Day 04: Tuesday 2/4/20

  • Breakfast – steel cut oatmeal with blue berries, almonds and strawberries, hot green tea
  • Lunch – Whole Foods smoked pork belly, chicken drum stick and beef brisket with steamed broccoli, cauliflower, Caesar salad with black berries 
  • Dinner – grilled salmon over mixed greens with crushed almonds, miso soup with mushrooms and cabbage
  • Gym time – none
  • Cheat – beans in miso, small bowl of chips
  • Drank plenty water
